RAW Vegan Onion Rings Recipe *Crispy* 😱 (with the PERFECT dipping sauce!)

This recipe calls for the follow products in the Elevated Pantry:

 

INGREDIENTS NEEDED FOR WET MIXTURE:

    • 1/2 cup of coconut milk
    • 1/2 cup of olive or coconut oil (omit this ingredient and do another 1/2 cup of plant-based milk if you want to keep it oil free)
    • juice of 1 lemon
    • 1-2 sweet (vidalia is great!) or white onions, cut into rounds (you can essentially use any onions for this, but these taste the best, without such a pungent bitter after taste. regardless, the longer they are dehydrated, the more that bitter taste goes away!)

INGREDIENTS NEEDED FOR DRY MIXTURE: 

    • 1 tablespoon of Black to My Roots
    • 2/3 cup of almond four
    • 2/3 cup of flaxmeal
    • 1/4 cup of fine coconut shavings
    • 1 teaspoon of ground garlic 
    • 1 teaspoon of dried oregano
    • 1 teaspoon of sea salt (or to taste)

INGREDIENTS FOR DANIELLE'S CREAMY ONION RING DIPPING SAUCE *(THE SECRET SAWCE!):

    • 1 cup of raw pine nuts OR cashews, pre-soaked in water for at least 1 hour. 4-8 hours is best. (or you can do a blend of both nuts. get creative!)
    • 1/4 cup of olive oil
    • 1/2 cup of plant-based milk
    • 1/2 orange pepper, deseeded and roughly chopped
    • 1 date, pitted
    • juice of 1 lemon
    • 1 teaspoon of lemon zest
    • sea salt to taste
    • 2-3 teaspoons of Jamaican Jerk Seasoning Rub (depending on your desired level of spice)

 

DIRECTIONS:

In a large bowl pour in all the ingredients for the wet mixture and whisk. Then, add the onion slices. Cover & let marinate for 1-3 hours.

 

In another large bowl, mix all dry ingredients.

 

Dip the marinated onions one by one into the dry mixture,

then into the wet mixture again, 

then into the dry mixture again.

(they will still be yummy if you choose to do just ONE coating of the wet/dry mixture!)

 

Lay the coated onions onto a dehydrator sheet and dehydrate at 118 degrees for 10-12 hours.

 

Blend all ingredients for the sauce, until smooth.

 

Serve onion rings with sauce, and perhaps a savory kale salad.

**They really taste great on top of raw burgers (with the sauce!), or even to serve with raw tacos.

 

Also, these onion rings are kinda messy/crummy to eat… it’s honestly a whole experience to be present for, lol..
