In a large bowl, mix all skewer ingredients (except lemon juice).
Add marinade ingredients and simply mix with your hands to fully combine. You can wear gloves for this step, if you’d like.
Pour the seasoned skewer ingredients into a ziplock bag, or safe glass container (covered) or large bowl (covered), to marinate for at least 3 hours — overnight is best.
The longer you marinate, the more those flavors will blend together most beautifully and harmoniously, as TIME is an ingredient.
After marinating, thread each veggie and mushroom onto the skewer with alternating ingredients and colors. Once your skewers are full of your delicious seasoned ingredients, it can actually be eaten raw!
Or.. You can “WOW” your family at the next BBQ and put these kebabs on the grill! They also taste great simply roasted in the oven. Once finished, squeeze a bit of fresh lemon juice on top. Enjoy!
I like to serve mine over a bed of salad and/or with quinoa, super-food pesto sauce, and avocado. My super-food pesto sauce is in my book, RAW AND RIPE.
Get creative with this! Use what you have, and try this with different veggies and different color bell peppers. The world is your playground. BBQ’s will never be the same!
