INGREDIENTS NEEDED:
CRUST:
- 1 cup of oats
- 1 cup of walnuts
- 1/2 cup of almond flour
- 3 tablespoons of psyllium husk
- 1/3 cup of plant-based milk
- 1/4 cup of maple syrup
FILLING:
- 1.5 cups of dates, pitted
- 1/2 cup of freeze dried apples (or dehydrated) *you can omit this ingredient if you just want delicious cinnamon rolls, no apple.
- 2/3 cups of plant-based milk
- 1/2 tablespoon of cinnamon
- 1/4 teaspoon of nutmeg
- 1/4 teaspoon of ginger
- 1/4 teaspoon of vanilla
- crushed walnuts or pecans (optional)
ICING:
- 1 cup of pre-soaked cashews (soaked for at least 1 hour)
- 1/4 cup of maple syrup
- 1/2 cup of plant-based milk
DIRECTIONS:
Blend oats and walnuts until (mostly) smooth. Then add psyllium husk, plant-based milk, and maple syrup to the blender and blend until (mostly) smooth. It should be like a gummy, wet dough at this point. Pour the contents of the blender in a large bowl, then add almond flour and lightly knead into a dough.
On a baking sheet lined with parchment paper, place your dough ball. Lay another piece of parchment paper on top of the dough & roll it out. Spread the dough until thickness is a little less than ½ an inch.
Blend filling ingredients until (mostly) smooth (except for walnuts/pecans). Some texture is fine. Then set your filling aside. **(No need to clean/rinse the blender after this step — you can leave the leftover date filling goodness, & add your sweet icing ingredients and blend it all together.)
Spread filling onto the dough. Add crushed walnuts or pecans (optional) on top of filling. Hand roll the dough into a log, using the parchment to assist.
Let set in the freezer for 1-2 hours.
Blend all icing ingredients. Set aside.
Remove your cinnamon apple log from the freezer. Slice cinnamon rolls about 1 inch - 1.5 inches thick. Add your desired amount of icing. Serve with homemade nice cream, or fresh slices of sweet red apples, if you wish.
Store your rolls in the refrigerator, in a food safe container.
